Canfield worked as a merchant in New York City before moving to Springfield, Illinois, in 1838, to work as a clerk in a general store. In 1840, he took a job as a clerk at Jacob Bunn's grocery business, where he worked the rest of his life. Politically, Canfield was a Whig. He never married.
