Son of Cyrus Kirby, George moved with his parents to Clary's Grove, Illinois in 1822. In 1832, Kirby purchased a tract of land in an area that would later be subsumed into Menard County. He married Dorcas Atterberry in 1834, in Sangamon County. In 1850, Kirby was farming in Menard County and owned $3,000 in real estate. By 1860, Kirby had amassed $20,000 in real estate, with personal property of $4,735.
